Nasi Dagang Pak Malau: Fish Curry and Amazing View in Langkawi

When I was in Langkawi, one day for breakfast we went to a restaurant called Nasi Dagang Pak Malau, a beautiful little home style restaurant sitting on the edge of the rice field with a view of the mountain in the background. To begin with, the view and the scenery was amazing, and paired with delicious food, it was one of the best restaurants I ate at in Langkawi. We were greeted by the owner and his wife, both of whom are extremely friendly and helpful. 

At Nasi Dagang Pak Malau they serve a Malaysian food called nasi dagang, which is traditionally rice served with fish curry. The dish is traditionally from the states of Terengganu and Kelantan, and although we ate this in Langkawi, the owners are from both of these states, and then moved to Langkawi. Everyone was serving nasi campur in Langkawi, and so we wanted to serve something different - more of a taste of home - the owner told me.

So traditionally again, for nasi dagang it would include just rice and fish curry, but at Nasi Dagang Pak Malau, in order to satisfy a more broad range of eaters, they prepare a number of different curries each day, including beef, chicken, and mutton. Fish and mutton are two of my favorite meats, and so I had to get the fish curry along with the mutton curry. After he scooped the curry onto my plate, he then added on a spoonful of pickled, made with cucumbers and carrots, and then I sat down at one of the yellow tables sitting on the side of the rice field. Both the mutton and the fish curry were spectacular, but I have to give it up for the flavor of the fish curry - it was full of spice, rich from coconut milk, and the fish meat was extremely firm.

If you get a chance to eat at Nasi Dagang Pak Malau when you are in Langkawi, it will definitely be one of the top meals you have when you’re there - for the beautiful atmosphere, the friendly owners, and the delicious nasi dagang.

RESEPI NASI DAGANG KELANTAN

3 cawan beras nasi dagang Kelantan
~ beras di rendam selama 20 minit, kemudian cuci bersih. Toskan
3 ulas bawang merah ~ di hiris
2 ulas bawang putih ~ dihiris
1 inc halia ~ di hiris kasar
1 helai daun pandan ~ di simpul
1 sudu teh halba
3 cawan santan  ~ dari 1 biji kelapa atau 1 kotak santan kara campur air jadikan 3 cawan.
1/2 sudu teh garam atau 1 sudu teh maggi cukup rasa.

Satukan semua bahan-bahan yang kita sediakan tadi. Masukkan ke dalam periuk nasi.
Kacau rata, kemudian tanak nasi seperti biasa hingga ia masak.
Bila dah masak, gemburkan nasi dengan chopstik dan tutup semula periuk dan biarkan ia masak dengan sempurna.

Ita suka masak terus nasi di dalam periuk nasi. Selain ianya mudah, ringkas dan cepat, ita tak perlu risaukan nasi hangit ke.. jelantah..ke.. bila cukup masa nasi dah pun siap. Dapur pun bersih tak berselerak dengan kukus la.. periuk la..

Sementara kita tunggu nasi kita masak bolehlah kita sediakan bahan untuk Gulai Ikan tongkol pula..

RESEPI GULAI IKAN TONGKOL 

Kebiasannya Nasi Dagang Kelantan menggunakan ikan tongkol untuk lauk gulainya yang di makan bersama nasi dagang. Jika tak suka ikan tongkol bolehlah di gantikan dengan ikan kembung. Anda juga boleh sediakan gulai ayam, jika tak suka ikan.

2 ekor ikan tongkol sederhana besar ~ siang ikan, potong dan cuci bersih
Air secukupnya untuk merebus
5 keping asam keping
1 sudu teh garam

Ikan tongkol ni jangan rebus lama-lama sangat ya, nanti dia hancur pula bila kita masak. Cukup sekadar dia masak aje dah ok! lagipun kita akan masak dia semula nanti di dalam gulai.

Sementara kita tunggu ikan tongkol kita empuk, kita sediakan pula bahan rencah untuk gulai kita ni.

Bahan Kisar

15 tangkai cili kering ~ rendam lembut, cuci bersih dan kisar
2 ulas bawang putih ~ kisar
7 ulas bawang merah ~ kisar
1 inc lengkuas ~ kisar
1 inc kunyit hidup ~ kisar

1 sudu teh lada hitam  ~ di tumbuk
1 gengam kelapa parut putih ~ di kisar



Bahan Perasa

3 cawan santan
2 keping asam keping
garam dan gula secukup rasa
1 buku gula melaka
1 kiub ikan bilis ~ jika suka
1 sudu teh Maggi Cukup Rasa ~ jika suka

Sayuran

2 biji tomato ~ potong baji
2 batang timun ~ belah 2 dan potong serong
2 tangkai cili merah ~ belah 2

Bahan dah pun tersedia, sekarang bolehlah kita mulakan proses memasak

Bila dah masuk sayur,  kacau rata terus tutup api. Jangan masak lama sangat bila dah masuk sayur, nanti lembik tak sedap pula. Dia sedap kalau kita makan sayur tu rangup-rangup lagi.


Dah pun siap gulai ikan tongkol kita. Mudah aje kan...

Sambal Nasi Dagang 

Bahan2
1/2 biji kelapa parut 
3 ulas bawang putih dihiris 
4 ulas bawang merah dihiris 
4 batang serai dihiris 
4 ekor ikan rebus diambil isinya saja (ikan kembung/selayang)
garam & gula secukup rasa

cara: 
1. Sangai kelapa parut bersama bawang putih, bawang merah dan serai sehingga garing dan kekuningan. 
menjadi kerisek 
2. Blend kerisek bersama garam dan gula.Ketepikan 

3. Blend isi ikan dan campurkan bersama sambal kerisek tadi. siap.
