NASI LAN KEDAH SHAH ALAM | WARONG HUNTER

POPULARITI nasi kandar sememangnya cukup menakjubkan sehinggakan hidangan itu bukan sahaja menjadi bualan masyarakat di utara Semenanjung, malah turut digemari di mana-mana pelusuk tanah air.

Hanya dengan sepinggan nasi dan pilihan pelbagai lauk di samping campuran kuah yang tepat pastinya menambat selera sesiapa sahaja yang menjamahnya.

Kini, Nasi Lan Kedah yang terkenal di Alor Setar, Kedah turut berada di Shah Alam apabila anak kepada pengasasnya membuka cawangan di Bandar Raya Anggerik ini.

Pengurus Nasi Lan Kedah, Muhammad Firdaus Mohd. Azlan, 25, anak ketiga daripada lima adik beradik ini mula berjinak-jinak dengan perniagaan sejak kecil apabila bapanya membuka kedai di Bangunan Peruda, Alor Setar.

Mesra disapa Firdaus, anak muda ini menyambung legasi yang dipelopori ayahnya sejak 34 tahun lalu dengan membuka cawangannya pada Mei lalu.

Firdaus berkata, pilihan rempah ratus yang menjadi rahsia keenakan adunan kuah dan nasi yang dihidangkan kepada pelanggan itu diambil dari utara tanah air seperti mana resipi yang digunakan di Alor Setar.

“Resipi turun temurun ini memang dijaga dan saya sendiri menyediakan makanan dan pes rempah ratus.
“Ini bagi memastikan rasa dan aroma tetap sama dan keenakan kekal sama seperti di Alor Setar,” katanya kepada S2.

Katanya, sambutan terhadap Nasi Lan Kedah amat baik kerana ada masanya pelanggan terpaksa beratur sehingga ke luar kedai untuk menikmati juadah.

“Kadangkala mencecah 1,000 pelanggan, lebih-lebih lagi pada waktu makan tengah hari. Malah ada yang datang dari Negeri Sembilan dan Melaka.

“Ada kalanya juga kedai terpaksa ditutup awal kerana lauk-pauk sudah habis ,” ujarnya.
Menurutnya, antara lauk yang menjadi kegemaran pelanggan adalah sotong kembang masak sambal, daging hitam, telur sotong dan ayam goreng kunyit.

Selain itu, konsep kedai yang santai memberi keselesaan kepada penggemar nasi kandar untuk menikmati hidangan dengan harga berpatutan.

“Harga makanan bergantung kepada saiz lauk. Ia serendah RM2.50 sehingga RM20 untuk satu hidangan ,” jelasnya.

Bagi melebarkan lagi perniagaannya, dia turut menyediakan perkhidmatan penghantaran serta memperkenalkan aplikasi pesanan makanan, makan2u yang boleh dimuat turun di Playstore yang membolehkan pelanggan membuat tempahan menerusi telefon pintar.

“Pihak kami juga merancang menggunakan trak makanan (food truck) di sekitar Bandar Tun Razak bagi membolehkan peminat nasi kandar merasai Nasi Lan Kedah. Selain itu, kami berhasrat untuk membuka sebuah lagi cawangan di Bangi,” katanya.

Restoran ini dibuka setiap hari bermula pukul 9 pagi sehingga 
8 malam manakala Sabtu dan Ahad sehingga 4 petang.

Kari Mamak Kepala Ikan Merah

Bahan bahan:
Kepala ikan jenahak/tenggiri
2 keping isi badan ikan di atas
1 cawan santan - tak payah yg pekat pun tak apa
5 sb rempah kari ikan Baba's
2 sb serbuk ketumbar Babas
3 sb cili serbuk Babas
1/2 sk jintan putih

2 sk biji sawi
3 sb halia + bawang putih - yg diblended
5 ulas bawang merah kecil - dimayang
2 biji fresh cili merah besar - belah dua
2 tangkai daun kari
Asam jawa, sampai rasa cukup masam 
2 biji bawang besar merah & 1 biji buah tomato - diblended hancur
Bendi dan terung

Cara Memasak:-
Tumiskan biji sawi, daun kari, bawang merah yg dimayang dan cili besar sampai wangi. Kemudian masukkan blended halia + bawang putih, serbuk2 kari tu semua. Tumis sampai garing. Masukkan air asam jawa.

Kemudian masukkan blended bawang besar + tomato, biarkan sekejap, masukkan santan. Sesuaikan kepekatan kuah dengan menambah air.


Biarkan sampai hampir hampir mendidih, masukkan ikan. Biarkan sampai betul betul mendidih, renihkan sekejap utk dapatkan texture kari yg menarik.http://lynk.my/wWxm

Line Clear Nasi Kandar,George Town.

Nasi Kandar is a popular northern Malaysian dish, which originates from Penang. It is a meal of steamed rice which can be plain or mildly flavored, and served with a variety of curries and side dishes. The word Nasi Kandar, came about from a time when nasi (rice) hawkers or vendors would kandar (balance) a pole on the shoulder with two huge containers of rice meals. The name has remained and today the word Nasi Kandar is seen on most Tamil Muslim or "Malaysian Mamak" restaurants and Indian-Muslim stall meals.

A 24-hour restaurant, Line Clear Nasi Kandar’s food tempts us with its ‘limited-time’ offerings. It is located in a narrow alleyway along Jalan Penang, with wooden tables and chairs, slightly near open drains. Don’t let that put you off though! In all honesty the food here is phenomenal. For a plate of rice, fried chicken, telur dadar (sunny side up omelette), vegetables and ‘kuah banjir’ (a mix of gravies), makes the whole meal that much more satisfying. There is an impressive amount of hype about their daily specials (ranging from fish head curry to beef gravy) and the extensive praise is clearly warranted. Adding to the whole value-for-money aspect of Line Clear Nasi Kandar is the fact that the food served comes in generous portions. Weekends will see people in long queues waiting patiently.

Nasi Kandar in Penang: Insanely Good Curry at Restoran Tajuddin Hussain

Nasi kandar is originally from Penang, and while it’s available all over Malaysia now, most people still agree that the best place to eat it is right in Penang. There are many restaurants that served rice and Indian curry throughout the city, many of them are legendary places like Nasi Kandar Line Clear and Nasi Kandar Beratur. But I chose to eat at a restaurant called Restoran Tajuddin Hussain, located right on the edge of Little India in Georgetown. I had walked past the restaurant a number of times while we were in Penang, and seeing how it was always packed out with customers during lunch, my wife and I decided that we need to go there to eat. The next day we returned, a little bit early to beat the lunch rush and chose seats. As soon as I walked in, I could tell Tajuddin Hussain Nasi Kandar was going to be epic. All the food was positioned at the front of the restaurant, and you could either go up to the front to place your order, or you could just sit down at a table and let the waiter take your order - we sat down and ordered from the waiter.

Honestly, I wanted to eat one of everything, to try every kind of curry they had, but we had to settle for a few of their signature dishes. The first curry I tried was their mutton curry, which set the bar. It was incredibly delicious, packed full of spice and flavor, rich and creamy, with a tender piece of mutton. Another dish we ordered was ayam rose, or chicken rose. It was equally as good, filled with spices, a tomatoey sauce, and just amazing with rice. My wife spotted the squid in the nasi kandar spread when we entered Restoran Tajuddin Hussain and so we also couldn’t resist ordering that. The squid was extremely tender and the gravy was spicy and flavorful. Additionally to all the Malaysian Indian curries, I got a plate of rice biryani for my base, and also a plate of vegetables and plate of daal to top things off. After finishing off round one of curry at Restoran Tajuddin Hussain, I still wanted more. We tried the mutton korma curry and we also go another plate of ayam rose because it was so good. The staff at the restaurant were friendly, the environment and atmosphere was authentic and action packed, and the food was almostly unbelievably delicious.

One of the best meals you can eat when you’re in Penang, or even somewhere else in Malaysia, is nasi kandar, rice and an assortment of Indian style curry. Our meal at Restoran Tajuddin Hussain was one of the best nasi kandar meals that I’ve ever had in my life, and I’m still dreaming about the food there. This is one of the best restaurants I ate at in Penang, and hope you have a chance to eat here when you visit.
