Fried Crispy Catfish (Pecel Lele) at Permata Mubarok 1

One for the many famous Indonesian foods, especially common at warungs and street food stalls is pecel lele, which is deep fried catfish. The catfish are usually pretty small, and they are lightly seasoned before being deep fried to a complete crisp.
Permata Mubarok 1 specializes in all sorts of deep fried things, and pecel lele is just one of them. They also had deep fried chicken and organs, and even deep fried napa cabbage - something that I had never eaten like this before. We ordered up a selection of different deep fried items, including some pecel lele, the deep fried catfish. And you could either order plain rice or nasi uduk, which is coconut fragrant rice, and I went with nasi uduk.
Finally, pecel lele wouldn’t be the same without sambal (chili sauce). They had a couple different versions of sambal, one was more sweet and the other was more just straight up chilies and garlic pounded into a beautiful condiment. 

You’ll find pecel lele all over Jakarta and Indonesia and it makes a popular and pretty tasty meal.


Cara Membuat Pecel Lele dan Bumbu Sambel nya!

Bahan-bahan:
  1. Ikan lele segar yang sudah dibersihkan, dibuat kerat-kerat pada bagian tubuhnya agar bumbu meresap. Lalu setelah dicuci dilumuri dengan jeruk nipis untuk menghilangkan bau amis.
  2. Lalapan seperti kol, slada, timun dan sebagainya sesuai dengan selera.
Bumbu untuk lele goreng yang dihaluskan:
Kemiri, ketumbar, bawang putih, jahe, lengkuas, kunyit dan garam dihaluskan
Pengolahan lele goreng:
Ikan lele segar yang sudah diberi jeruk nipis dilumuri dengan bumbu halus di atas, lalu biarkan sekitar satu jam agar bumbunya meresap. Setelah itu bisa langsung digoreng di minyak panas dengan minyak yang cukup agar matangnya merata. Angkat dan tiriskan.
Bahan untuk sambal pecel lele lezat:
Cabai merah segar, cabai rawit sedikit, bawang putih, bawang merah, gula merah, terasi dan tomat. Semua bumbu direbus kecuali terasi dan gula merah. Terasi dibakar hingga harum lalu dimasukkan bersama gula merah ke dalam bumbu yang sudah dihaluskan. Sebaiknya menggunakan gilingan manual agar rasanya lebih lezat dan terasa nikmat di lidah.

Manado Food at Ikan Tude Bakar Restaurant in Jakarta

Along with Tere, we went to Restoran Ikan Tude Bakar in Jakarta to have a meal of Manado food. Indonesian Manado food is know for being spicy and full of flavor, and after trying it for the first time, it’s exactly my kind of food. We ordered a bunch of different dishes including cakalang rabe, dry fish with chili, goropa woku, a fish curry with lots of turmeric and chilies, bubur Manado, a type of Manado style rice congee porridge, ayam rica rica, chicken in a thick spice filled and herb sauce, and tude bakar, grilled mackerel. All the dishes were incredibly delicious, but the dish I probably liked the most was the goropa woku, which included pieces of grouper in a sauce that was absolutely packed with turmeric, chilies, onions, and lemon basil. It was a truly outstanding dish. After eating at Ikan Tude Bakar, I’m a huge fan of Indonesian Manado food.

After we finished with lunch we then took a dive over to a legendary ice cream shop called Ragusa Es Italia, located very close to the National Monument. The shop was very old and classic. Outside the ice cream store there were also a few street food carts, and so along with having some ice cream, we also had a plate of asinan Betawi. 

Resep Ikan Woku Belanga khas Manado

1 kg grouper fish head or whole grouper fish (Ikan kerapu, you can replace with red snapper/ ikan kakap merah, ikan mas/grass carp fish or ikan mujair/tilapia)
2 tbsp calamansi lime juice (you can replace with lemon juice)
1 kaffir lime leaves (daun jeruk purut), deveined
1 cup lemon basil leaf (daun kemangi)
4 lemongrass (sereh),  take the soft white part only, thinly slice
7 cm pandan leaf (daun pandan), tide up
1/2 turmeric leaf (daun kunyit), tide up
1 cup coconut milk (santan)
2 cups water (air)
1 tomato (tomat), diced
2 tbsp vegetable oil(minyak sayur)
salt  and pepper to taste
a pinch of sugar (gula)*optional
Resep Bumbu Ikan Woku Belanga Spice Paste Recipe:

12 shallots (bawang merah)
6 cloves garlic (bawang putih)
6 cayenne pepper (cabe merah)
6 or more bird eye chilli (cabe rawit)
1 tsp HOMEMADE GARAM MASALA SPICE MIXTURE (bubuk kari)
4 cm ginger (jahe)
3 cm galagal (lengkuas)
4 cm turmeric (kunyit)
4 candlenuts (kemiri)
Instruction:

season the fish head with kalamansi limes juice, salt ang pepper, set aside
Heat up the 2 tbsp oil in a heavy bottom sauce pan, saute the spice paste with a low heat until the spice is throughly cooked. Visual aspect is the key! the oil is slowly separated and formed in the edge when it throughly cooked.
Add lemongrass, pandan leaves, turmeric leaves, kaffir lime leaves,  asam gelugur, tomato . Stir another minutes.
Pour the coconut oil and water, bring to boil.
Reduce the heat and cook until the coconut milk is throughly cook and adjust the taste, keep stirring
Add the grouper fish hesd and simmer unti the fish is cooked, keep gently pouring the woku broth over and over again to the fish head to make it properly cooked and the spice is properly penetrated to the fish flesh.

Bumbu Resep Ayam Rica Rica Manado Goreng

  1. Bahan utama yang dibutuhkan adalah satu ekor ayam ukuran sedang besar. Pilih ayam yang segar. Buang jeroannya dan potong menjadi 12-15 bagian (tergantung selera).
  2. Bawang putih ukuran sedang besar sebanyak 4 pcs. Kupas kulitnya dan haluskan. Kalau bisa gunakan bawang putih lokal untuk bumbu tumisannya.
  3. Bawang merah lokal ukuran sedang besar sebanyak 8 pcs. Kupas kulitnya dan haluskan untuk bumbu tumisannya.
  4. Buah cabai meras besar ukuran sedang besar sebanyak 18 pcs. Cuci bersih dan haluskan untuk bumbu tumis. Jumlah bisa ditambah atau dikurangi sesuai selera.
  5. Buah Cabai Rawit merah kurang lebih sebanyak 6 pcs. Cuci bersih dan haluskan untuk ditumis. Kalau suka pedas, jumlah cabai rawitnya bisa ditambah.
  6. Batang sereh ukurang sedang sebanyak 2 pcs. Memarkan terlebih dahulu sebelum digunakan.
  7. Jahe ukuran sedang besar sebanyak kurang lebih 1 pcs. Tidak perlu dikupas, cukup dimemarkan atau digeprek saja supaya lebih meresep dengan bumbu lainnya.
  8. Daun jeruk ukuran sedang sebanyak 7-8 lembar.
  9. Garam secukupnya atau kurang lebih sebanyak satu sendok kecil.
  10. Gula secukupnya.
  11. Air bersih secukupnya (kurang lebih 200 cc).
  12. Minyak sayur untuk menggoreng dan menumis bumbu secukupnya.

Cara Membuat Resep Masakan Ayam Rica Rica Pedas Asli

  1. Setelah ayam dicuci bersih dan dipotong sesuai selera, langkan pertama dalah menggoreng ayam tersebut. Gunakan minyak yang baru dan api sedang. Bolak balik ayam sampai setengah matang baru diangkat dan ditiriskan.
  2. Kurangi minyak yang tadi untuk menggoreng ayam dan sisakan minyak secukupnya untuk menumis. Hidupkan dengan api kecil sedang dan masukkan bawah putih halus, bawang merah, cabai rawit dan cabai merah besarnya.
  3. Aduk aduk bumbu bumbu di atas sebentar sampai tercium bau harum.
  4. Masukkan potongan ayam setengah matang dan aduk aduk sebentar ke dalam bumbu tumisan sampai benar benar rata.
  5. Masukkan air bersih secukupnya dan aduk aduk lagi sampai semua bahan tercampur rata.
  6. Masukkan sisa bumbu bumbu diatas (batang sereh, jahe, daun jeruk nipis, garam dan sedikit gula). Aduk aduk kembali sampai semua baha tercampur rata.
  7. Setelah ayam benar benar matang dan empuk, cicipi dulu dan tambahkan garam gula atau penyedap rasa jika diperlukan.
  8. Aduk aduk kembali sampai bumbu bumbu meresap ke dalam daging ayamnya. Angkat dan sajikan ke dalam mangkok atau piring hidangan.
Bagaiman menurut teman teman cara membuat Resep Ayam Rica Rica diatas? Ternyata tidak sesulit yang kita bayangkan. Memang lebih mudah dan praktis kalau kita beli jadi. Stunning Fish Head Curry at Rumah Makan Medan Baru

Located just north of the Jakarta National Monument, Rumah Makan Medan Baru is a popular Indonesian Medanese restaurant that is known for serving gulai kepala ikan (fish head curry). From the outside of the restaurant it looks very small and just like a shop house. So I was surprised when I walked in to find multiple dining rooms, lots of tables, and lots of happy customers eating curry. Most of the curries and dishes are all prepared and sitting at the front of the restaurant, and when you sit down, you’ll be delivered a selection of different dishes all to your table.

The gulai kepala ikan (fish head curry) was absolutely incredible - one of the best versions of any fish head I’ve ever head. The fish head was covered in an almost ridiculously rich and creamy coconut milk curry that was very fragrant and flavorful. The fish was also very meaty and juicy. Along with rice, it was sensational. 

Another dish that Medan Baru is famous for is burung punai goreng (fried pigeon). We got two of them, and they were seasoned with some spices and then fully deep fried to a crisp. Again, the little pigeons, even though there’s not a lot of meat to eat on them, the meat that was there was so succulent. I loved it. For some bites of the fried pigeon, I dipped it into the different sambal chili sauces that were on our table as well. Both dishes were extraordinary. 

Additionally I also got a bowl of daun pepaya (papaya leaves), that were a little bitter, but went really well with the sambal as well. Finally, I ordered a plate of gulai daun singkong (curry cassava leaves), which were also fantastic.


AUTHENTIC NYONYA PENANG STYLE FISH HEAD CURRY
1Big Red Snapper Fish Head
(I use 1 whole Seabass cleaned and cut into parts)

Chili Paste
8 shallots
3 garlic
half a tsp turmeric powder or a thumbsized fresch turmeric
2 tsp roasted belacan
4 fresh red chillies
4 dried red chillies soaked in water
1 tsp roasted fennel seeds
3 tbsp (flat) coriander powder
a little water
1 tbsp oil
all together into a blender and blend into a fine paste, set aside

3 stalk of daum kesum(thai basil leaves)
1 lemongrass bruised
5-6 pieces curry leaves
50gm tamarind paste mixed with 50ml water sieve and squeezed to get tamarind juice.
1 can light coconut milk (santan)

1 tomato cut in pieces
1 cup about 3 to 4 cm long beans (french beans)
half zucchini cut into cubes
Aubergine and Okra (optional)

4 tbsp oil.
Salt and Sugar to your taste.

Heat a wok. Add Oil and fry the chill paste till oil have broken through like all my other curry spices paste and till fragrant. Then add lemongrass, curry leaves and thai basil and fry together shortly.
Add the cut fish, stir and coat the fish with the chill paste.
Add a little water about 20ml , if the chill paste is too dry and it stops the chill paste from spurting out of the wok.

Then continue to add the coconut milk and all the vegetables.
Add the ready sieved tamarind juice too.
Stir and mix well.
Cover and bring to a medium boil. Cook for 5-6 minutes till
Fish is cooked. Finally adjust to taste. Add Sugar and Salt and if
not sour enough add a little more tamarind juice.

The final taste should be slightly creamy from the coconut milk, Sweet, a little sour with a touch of salty taste.

Gulai Kepala Ikan 
Gulai adalah masakan berbahan baku kuah santan yang memiliki cita rasa gurih. Untuk bahan isiannya, gulai pada umumnya menggunakan daging ayam, aneka ikan, kambing, sapi bahkan sayuran seperti nangka muda dan daun singkong. Ciri khas hidangan ini adalah bumbunya yang kaya rempah kemudian dimasak dalam kuah santan.

Resep lengkap bagaimana cara membuat gulai kepala ikan dapat dilihat di bawah:

Bahan:
1 kepala ikan kakap. Dibelah dua
500 ml santan cair 
200 ml santan kental 
3 buah asam kandis 365
5 lembar daun jeruk
2 lembar daun salam 
1 lembar daun kunyit 
2 batang serai 
Minyak 365 untuk menggoreng 

Bumbu halus :
7 siung bawang merah
5 siung bawang putih 
10 buah cabai merah keriting
3 cm jahe
3 cm kunyit
3 cm lengkuas
1 sdt ketumbar. Sangrai 
½ sdt gula
1 sdt garam 
½ sdt lada putih

Cara Membuat:
1. Cuci bersih kepala ikan kakap lalu buang insangnya kemudian beri perasan jeruk nipis agar ikan tidak amis. Diamkan selama kurang lebih 15 menit. Tiriskan 
2. Haluskan bawang merah, bawang putih, cabai merah keriting, jahe, lengkuas, ketumbar dan kunyit
3. Panaskan minyak kemudian tumis bumbu yang sudah dihaluskan dengan ditambahkan daun jeruk, daun salam, daun kunyit, serai dan asam kandis
4. Masukan kepala ikan kemudian masak ikan bersama bumbu hingga ikan berubah warna 
5. Kemudian tambahkan santan cair aduk rata agar santan tidak pecah. Masak dengan menggunakan api kecil
6. Setelah kuah mendidih tambahkan santan kental kemudian aduk rata

New York City Food Tour : Melt-In-Your-Mouth Pastrami at Katz’s Deli and The Halal Guys!

New York City is an incredible food city because of the diversity of the food available. On this New York City food tour we started off the day by going to one of the most famous restaurants in NYC, Katz's Delicatessen to eat pastrami. Next, we ate at a restaurants in New York City Chinatown called Spicy Village for an amazing pan of “Spicy Big Tray Chicken,” and for dinner I had chicken over rice from The Halal Guys, one of the most popular New York City street foods.

1:21 Katz's Delicatessen - There are few places in New York City for food as famous as Katz's Delicatessen, an absolute legendary deli in the city. Although it’s well overpriced, because it’s such a heritage NYC institution, it’s one of the must eat restaurants in the city. I arrived early in the morning, hoping to beat the crowds, which I did (go for breakfast if you want to avoid lines). After a little contemplation, I decided to go for the reuben with pastrami and a half of corned beef. The corned beef was alright, but the reuben with pastrami was incredible. Total price - $48.56

13:32 Spicy Village - Next up on this New York City food tour my wife and I walked around New York City Chinatown and eventually found our way over to a restaurant called Spicy Village (thanks to Monty for this recommendation). The one dish I mainly wanted to eat at Spicy Village was the Spicy big tray chicken, a pan of fried chicken parts and noodles in a spicy and mouth numbing broth. It was everything I had hoped for and more, and it was one of the best foods I ate in New York City! Total price - $22 - But along with the spicy big tray chicken we had an extra dish as well. 

18:32 Times Square - One of the busiest and most recognized squares in the world is Times Square in New York City. So in the afternoon, happy and full of Spicy Village and Katz’s Deli, we walked over to Times Square to enjoy the people watching and the ridiculous amount of lights and action.

20:19 The Halal Guys - While walking through Times Square I remembered that one of the most popular New York City street food stalls wasn’t too far away. So we walked over to The Halal Guys, and I ordered chicken over rice. The chicken over rice itself is prepared pretty plain, but the flavor in The Halal Guys is all in the white and red sauce, both of which are incredibly flavorful and delicious. It was my first time to eat at The Halal Guys, and I’m pretty happy I did. Chicken over rice - $7

It was a great first full day in New York City with some incredibly delicious food. Probably my favorite dish of the day was the spicy big tray chicken from Spicy Village, but all the food was so food.
