Indonesian sate (also spelled satay) is one of the most famous Indonesian foods, and there are many different types of sate available in Indonesia.
In this video, I went to a famous street food stall in South Jakarta, called Sate Ayam and Kambing H. Romli, that specializes in Sate Madura. I could smell the aroma of the smoke and the sate before I arrived, and I couldn’t wait to try it.
In order to make this type of Indonesian sate, the chicken and goat were pre marinated in lots of kecap manis and other spices, and then I think they were already pre-cooked a little bit. Then when they made the bathes of sate, they put a huge handful of the skewered meat on the grill, on a very high heat fire, and grilled them for a few minutes on either side. That’s one of the tricks of making Indonesian sate - making sure the fire is very hot, like flaming hot, to give the meat a wonderful smoky roasted flavor. And also that sweet soy sauce sort of caramelizes onto the meat as well.
At Sate H. Romli they had both chicken (ayam) and kambing (goat), and so Ying and I got a plate of each. The sate ayam came in a peanut sauce with rice cakes on the top and then it was also served with a side of chili sambal sauce as well. The sate kambing was in more of a sweet soy sauce and also served with rice cakes on top to make it a complete meal. It also came with some diced up chilies and shallots sprinkled on top. Both the chicken and goat Indonesian sate were really, a little on the sweet side, but tasted extremely good. I think overall I preferred the chicken sate at this place, as it was tender and juicy and I enjoyed it with the peanut sauce and the sambal chili sauce. In addition to great Indonesian sate in Jakarta, the crew at Sate H. Romli are all very nice and friendly.
Resep Membuat Sate Ayam Bumbu Kacang Enak
½ ekor ayam (buang kulit dan tulangnya lalu potong dadu)
5 sendok makan kecap manis (olesan)
2 sendok makan margarine (lelehkan, untuk olesan)
2 buah jeruk limau (jika suka)
Tusukan sate secukupnya
350 ml air
150 gram kacang tanah goreng (haluskan, bisa dengan blender (lebih halus) atau diulek sendiri tapi agak kasar
5 sendok makan kecap manis
Garam secukupnya
Merica bubuk secukupnya
Minyak goreng secukupnya (untuk menumis)
5 butir bawang merah
3 siung bawang putih
4 buah cabai merah
2 butir kemiri
Irisan tomat, irisan cabai rawit, irisan bawang merah, ketupat atau lontong
Langkah pertama, panaskan minyak, kemudian masukkan bumbu-bumbu yang dihaluskan (bawang merah, bawang putih, cabai merah, dan kemiri) lalu tumis hingga harum.
Langkah kedua, Masukkan kacang tanah yang telah dihaluskan sebelumnya dan air. Kemudian masak sampai mendidih dan terlihat mengental.
Tambahkan merica bubuk, garam, kecap manis lalu aduk hingga rata.
- Langkah pertama, Cuci daging ayam hingga benar benar bersih lalu tiriskan. Setelah daging ayam kering kemudian tusuk ayam dengan menggunakan tusukan sate, lalu kemudian sisihkan
- Langkah kedua, Campur kecap manis dan margarine menjadi satu kemudian aduk hingga tercampur secara rata. Setelah itu oleskan pada sate ayam secara merata.
- Langkah ketiga, Panggang sate ayam di atas bara api hingga terlihat setengah matang, lalu angkat. Selanjutnya celupkan ke dalam bumbu kacang kemudian panggang kembali hingga daging ayam matang dan terlihat berwarna kecoklatan lalu Angkat.
- Terakhir, hidangkan sate ayam dengan bumbu kacang serta air jeruk limau (jika suka), kemdian lengkapi dengan irisan tomat, irisan bawang merah, irisan cabai rawit, dan lontong atau ketupat.
Resep Sate Kambing Bumbu Kecap spesial
500 gram daging kambing
100 ml kecap manis
200 ml air matang
secukupnya tusuk sate
1/2 buah jeruk nipis , peras airnya
10 buah cabai rawit merah , potong
kecap manis secukupnya
1 buah jeruk nipis
7 buah bawang merah , iris tipis
- Langkah pertama bersihkan daging kambing, lalu kemudian potong dadu, dan sisihkan.
- Langkah kedua, Campurkan air perasan jeruk, 100ml kecap manis, dan 200ml air matang, aduk aduk, lalu kemudian tuangkan dalam daging kambing, dan aduk aduk lagi, lalu diamkan sekitar 10 menit.
- Langkah ketiga, Tusuklah daging kambing dengan menggunakan tusuk sate yang berisikan 5 daging dalam 1 tusuk .
- Terakhir, Bakar daging kambing, sampai matang dan empuk sambil di olesi dengan sisa bumbu olesan. Setelah matang, sate kambing buatan anda pun siap untuk disajikan (Agar lebih nikmat sajikan sate kambing dengan bumbu kecap pedas).
