Amazing Uzbek Food in Samarkand - GIANT 21 METER Kebab Grill + Ancient Uzbekistan!



Samarkand is a monumental city of history and food that played a major
role along the Silk Road, in between China and the Mediterranean. It’s a
city of fascinating history, giant plates of plov, and incredible
kebabs.

Gur-e Amir Сomplex - To begin this full tour of Samarkand, we started in
the morning at Gur-e Amir Сomplex, the tomb and mausoleum of Amir
Timur, the founding father of Samarkand, responsible for building much
of the ancient remains of the city. The tomb complex from the outside is
impressive, but the inside will blow you away.

Registan - There’s no square more monumental and grand in scale than
Registan, the center of the ancient city. You’ll find madrasas and
mosques, all of which are intricately decorated and magnificent.

Siab Bazaar - A short walk from Registan is Siab Bazaar, right outside
Bibi-Khanym Mosque. At the market we stopped to have tea with one of
Bekruz’s friends and tasted some nuts and dried fruit. The apricot seeds
were new for me, and the dried apricots were spectacular.

Osh Markazi - There’s no better place to eat plov, the national dish of
Uzbekistan, when you’re in Samarkand than Osh Markazi. Samarkand plov is
notable for the rice being cooked in flax-seed oil with yellow carrots
and beef. It was one of the best meals and dishes I had in my entire
trip to Uzbekistan.

Ulugh Beg Observatory - At its time of being built by Ulugh Beg, it was
one of the most advanced and important astronomy observatories in the
world.

Domashnii Restaurant - We didn’t stay long at the observatory because
right behind it you’ll find Domashnii Restaurant, a local restaurant
that specializes in chickpeas and lamb. The dish is so comforting and
both the lamb and chickpeas melt in your mouth.

Ikrom Shashlik - Next we went to eat Samarkand kebabs, again some of the
best kebabs I had on my entire trip to Uzbekistan. The bull testicles
and minced meat kebabs were great, but the highlight was the skewer of
alternating thin lamb meat and fat. As I was leaving they told me their
grill was 21 meters long and the grillmaster had been grilling there for
over 20 years.

Shah-i-Zinda - At about 5 pm we arrived to Shah-i-Zinda, another
masterful tomb complex that includes one of the top sights of Samarkand:
the turquoise alley of tombs. The turquoise and blue mosaic will make
your jaw-drop.

Home-cooked dinner - Finally to end this incredible food and sights tour
of Samarkand we went to a family home restaurant where we enjoyed a
simple local meal in a family home courtyard. It was the perfect ending
to an incredible day in Samarkand, Uzbekistan.

Tarragon is a relative to the Sunflower family and there are two different breeds of Tarragon, Russian and French. However, when you go shopping and pick up some Tarragon for your pantry or a favorite recipe it is almost guaranteed that you have just selected the dried leaves of the Tarragon plant because that is what is most often used and sold for commercial purposes.

Tarragon has a somewhat bittersweet flavor to it, almost resembling anise with that hint of licorice flavor to it. Tarragon does not have a long history behind it like most of the other herbs as it was not brought into the Unites States until the 19th century. It does have some mention about being used in England much before that time though. Traditionally, Tarragon is used to flavor such things as vinegar, relishes, pickles, mustard, and other various sauces.

The word Tarragon is derived from the French word which means "little dragon." There are two beliefs about how this nickname came about; one is because back in early times it was thought that Tarragon had the ability to cure venomous snake bites. Other thought it got this name because of the distinct roots that the Tarragon plant has that quite clearly resemble that of a serpent.

However, sometime as early as the 13th century Tarragon became widely used for seasoning vegetables, inducing sleep, and as a breath freshener. Not until the 16th century did Tarragon become more widely known. The Tarragon that is sold in the US today is not true Tarragon but rather Russian Tarragon which is not nearly the same. True Tarragon will be called French Tarragon and if you want to be sure that is what you are getting it is best to grow your own.

It is not recommended to use dried Tarragon because all of the active oils have been dried out. It is best to use fresh Tarragon which needs to be used rather sparingly because of its pungent taste. If you have grown the Tarragon yourself and have harvested it then put it in a Ziploc bag and stick it in the freezer. When it is time to use it there is no need to defrost it but remember that heat intensifies the flavor of Tarragon. If you have ever had Béarnaise Sauce, you should have recognized that Tarragon is the main ingredient in it.

Tarragon is used when preparing many sauces. In a pinch it has been said that a substitute could be chervil, a dash of fennel seed, or anise but the flavor will not be the same.

Many have claimed that Tarragon works well to induce appetite and the root of Tarragon was once used to cure toothaches. It is linked to medicinal uses for digestive aid and also for the prevention of heart disease. It can be used to induce menstruation and can be used as a sale substitute for people with high blood pressure. Amazing Fried Duck and Sambal at Bebek Goreng H. Slamet

At Bebek Goreng H. Slamet, you have a few different choices of deep fried duck (bebek goreng). If you're feeling really hungry you could order an entire fried duck, or you can just buy deep fried duck by the piece, and you have a choice of either the dark meat thigh or the breast. Since I couldn't make up my mind which one to choose I decided to get both of them, and I ordered the complete full plate set that included the deep fried duck plus rice, a plate of green herbs and vegetables, and last but not least an incredibly delicious sambal chili sauce.

The bebek goreng arrived to my table, and it was definitely pretty small, but it made up for its size by being packed with incredible flavor. I'm not sure exactly how the duck was prepared, but I'm guessing it was covered in a thin layer of flour or something like that before being deep-fried. It didn't have a real batter feel to it, but at the same time it did have an extra incredibly crispy skin and golden layer around the outside. And along with the deep fried bebek goreng, what was really mind blowing about my meal at Bebek Goreng H. Slamet, was the sambal chili sauce. It was an oil-based sambal, and it was just packed with red chilies and garlic. The chili sauce went so well together with the deep fried duck, rice, and then eating each bite with a fresh piece of lemon basil, was outstanding.

The bebek goreng at Bebek Goreng H. Slamet is undoubtedly very greasy, and it will leave you feeling like you just used to lip gloss, but there is no denying that the food is incredibly tasty. 

Bahan Bebek Goreng Empuk dan Gurih Ala H Slamet
  • 1 ekor bebek dan usahakan cari bebek yang masih muda lalu dipotong menjadi 4 bagian atau dipotong sesuai kebutuhan dan selera tentunya, dan jangan lupa dibersihkan ya agar bulu dan kotorannya hilang.
  • 1 buah jeruk nipis yang nanti diambil airnya, tujuan utamanya agar bau amis pada daging bebek hilang.
  • 5 lembar daun jeruk purut
  • 2 batang serai yang dimemarkan pada pangkal akarnya
  • 2 cm lengkuas juga dimemarkan
  • 1 bungkus penyedap rasa ayam (hanya bagi yang suka penyedap rasa)
  • 1 sendok teh gula pasir
  • minyak goreng secukupnya
Bumbu Bebek Goreng Empuk dan Gurih Ala H Slamet yang dihaluskan.
  • 7 butir bawang merah
  • 5 siung bawang putih
  • 5 cm lengkuas muda diparut
  • 3 butir kemiri
  • 3 sendok teh ketumbar disangrai dahulu sebelum dihaluskan
  • 3 cm kunyit
  • 3 cm jahe
  • 2 sendok teh garam
  • 1 batang serai diambil bagian putihnya lalu diiris halus
  • 1 sendok teh merica biji
Bahan bahan di atas sangat mudah didapatkan baik di pasar tradisional atau di pasar modern seperti supermarket, pasar segar dan sebagainya. Bila semuanya sudah ada dan peralatan dapur juga sudah siap mari kita membuat bebek goreng empuk ini.
  1. Satu ekor bebek yang sudah dipotong menjadi 4 bagian dan sudah dicuci bersih tadi dilumuri dengan air jeruk nipis diseluruh bagian dagingnya sambil diremas-remas sampai merata di seluruh bagian daging bebek tersebut, hal ini dimaksudkan untuk menghilangkan bau amis. Setelah air jeruk nipis merata pada daging bebek selanjutnya wadah ditutup rapat dan simpan sementara dalam lemari es selama 30 menit agar aroma jeruk meresap dalam daging. Setelah waktu yang ditentukan yaitu 30 menit baru daging bebek dibilas kembali dengan air bersih dan ditiriskan airnya.
  2. Haluskan bumbu-bumbu yang terdiri dari 7 butir bawang merah, 5 siung bawang putih, 5 cm lengkuas muda parut, 3 butir kemiri, 3 sendok teh ketumbar sangrai, 3 cm kunyit, 3 cm jahe, 2 sendok teh garam, 1 batang serai iris halus dan 1 sendok teh merica biji. Setelah halus lalu bumbu tersebut digoreng hingga harum dan masukkan  5 lembar daun jeruk purut, 2 cm lengkuas yang sudah dimemarkan, 1 bungkus penyedap rasa ayam dan 1 sendok teh gula pasir.
  3. Bila bumbu telah mengeluarkan aroma wangi masukkan potongan daging bebek dan diaduk agar bumbu meresap dan semua bagian daging bebek terbalur bumbu. Tuangi air secukupnya dan dimasak dengan menggunakan api sedang sampai airnya mendidih. Setelah mendidih kecilkan apinya dan biarkan daging bebek sampai empuk dan bila airnya berkurang dapat ditambahkan lagi sampai bebek benar-benar empuk. Jangan lupa untuk mencicipi bumbunya dan bila dirasa ada yang kurang misalnya kurang asin, kurang manis dan sebagainya bisa ditambahkan sesuai selera masing-masing.
  4. Setelah daging bebek empuk matikan kompornya dan biarkan selama 1 jam agar bumbu-bumbu meresap dalam daging. Sementara siapkan minyak panas yang banyak untuk menggoreng bebek yang telah didiamkan selama 1 jam tadi.
  5. Setelah minyak panas masukkan potongan bebek dan goreng hingga daging bebek kering baru kemudian diangkat dan ditiriskan. Bersama dengan sambal korek bebek goreng empuk dan gurih ala H Slamet sudah siap untuk disajikan.

Selain dengan sambal korek yang menjadi ciri khas pendamping bebek goreng empuk haji Slamet variasikan juga dengan irisan ketimun, kol, daun kemangi dan lain-lain agar lebih lengkap menikmatinya. Pada ukuran 1 ekor bebek bila dipotong menjadi 4 bagian maka dapat dihidangkan untuk 4 orang atau 4 porsi. Bagaimana tertarik untuk mencobanya ? selamat mencoba.

Bahan bahan Resep Bebek Madura Bumbu Hitam Asli

  1. Sesuai namanya, bahan utama yang dibutuhkan adalah 1 ekor bebek yang baru saja dipotong ukuran sedang. Cuci bersih lalu potong daging bebek sesuai selera (kurang lebih sebanyak 8 ekor saja).
  2. Jeruk nipis yang diambil airnya kurang lebih sebanyak 1-2 buah saja. Peras airnya untuk menghilangkan bau khas bebeknya.
  3. Daun jeruk kurang lebih sebanyak 12-15 lembar saja. Cuci sebelum digunakan.
  4. Tomat segar ukuran sedang besar kurang lebih sebanyak 2 buah. Cuci bersih lalu iris iris.
  5. Batang serai kurang lebih sebanyak 2 batang saja.
  6. Gula merah atau gula jawa secukupnya sesuai selera atau kurang lebih sebanyak 2 sendok makan gula yang sudah disisir.
  7. Air asam jawa kurang lebih sebanyak 1-2 sendok makan saja.
  8. Garam dapur dan gula pasir secukupnya kalau diperlukan
  9. Minyak goreng baru secukupnya atau kurang lebih sebanyak 1/2 liter.

Bahan Bumbu Bebek Madura Asli

  1. Bawang putih kurang lebih sebanyak 4-5 siung saja. Kupas kulit bawang lalu potong supaya mudah saat akan diuleg.
  2. Bawang merah ukuran sedang besar kurang lebih sebanyak 10 siung saja. Kupas kulit bawangnya lalu potong supaya mudah saat akan diuleg.
  3. Kencur yang sudah dibersihkan kurang lebih sepanjang 3 cm saja.
  4. Batang kunyit yang sudah dikupas kurang lebih sepanjang 2-3cm saja.
  5. Kemiri kurang lebih sebanyak 5 pcs saja.
  6. Buah cabai rawit merah secukupnya sesuai selera atau kurang lebih sebanyak 15 sampai 22 pcs.

Cara Membuat Nasi Bebek Madura Yang Mudah, Enak dan Lezat

  1. Siapkan wadah yang bisa ditutup dan masukkan potongan daging bebek bersama dengan air jeruk nipis. Aduk aduk supaya rata air jeruknya ke semua bagian dagingnya.
  2. Masukkan kedalam lemari pendingin kurang lebih selama 30 menit supaya bau amis khas unggas ini hilang.
  3. Selanjutnya haluskan dan uleg semua bumbu bebek goreng maduranya sampai benar benar halus dan merata.
  4. Siapkan penggorengan dengan api sedang kecil dan tuangkan minyak secukupnya (kurang lebih 100ml).
  5. Masukkan bumbu bebek madura ke dalamnya dan aduk aduk sampai tercium bau harum khas tumisan.
  6. Tambahkan minyak lagi (kurang lebih 350 ml) dan aduk aduk sebentar.
  7. Masukkan daging bebek beserta daun jeruk, gula merah, asam jawa, daun serehnya dan kemudian aduk aduk dan masak dengan tutup (diungkep).
  8. Tambahkan sedikit air apabila daging bebeknya sudah mulai tidak terendam minyak dan masak lagi sampai benar benar empuk dan warnanya menghitam (kurang lebih selama 3.5-4 jam).
  9. Setelah dagingnya empuk, koreksi rasanya dan tambahkan garam dan gula pasir apabila diperlukan. Aduk aduk kembali sebentar.

Selesai sudah cara membuat nasi bebek madura bumbu hitam nya. Memang dibutuhkan waktu yang cukup lama untuk membuat resep bebek madura hitam ini. Kalau mau cepat, sebenarnya daging bebeknya bisa dipresto terlebih dahulu sebentar sampai agak empuk, baru dicampur dengan bumbu bebek hitam asli maduranya. Nasi Padang - Amazing Beef Rendang and Gulai Otak!

I can still remember my first time to ever eat Nasi Padang, when I visited the island of Sumatra back in 2009. I had a plate of rice, piled high with a variety of different curry dishes and chili filled dishes. The combination of flavors and the variety of dishes on my plate just astounded me, and my taste buds rejoiced. Until now, Nasi Padang has always remained one of my favorite Indonesian food meals to eat. And along with being very common throughout Sumatra, in Jakarta, Padang food is perhaps one of the most beloved meals as well, and you’ll find hundreds of Nasi Padang restaurants in the city.

There are two ways to eat Nasi Padang. If you go to a street food stall they normally served it in the pesan way, where you get a plate of rice, and designate which curries and dishes you’d like to eat, and they are all placed on top of your rice - so you’ve got a one plate meal. And this is the way that I’d normally always eating Nasi Padang. But when you go to a nicer sit down restaurant, still very local, they often serve it in the hidang method, where as soon as you sit down, you’re given a variety of all the different dishes they have prepared, and they set them all in front of you on your table. You don’t need to eat everything they give you, but you pay for what you eat, and don’t pay for what you don’t eat. It’s truly a magical way to have a meal, to see all the different dishes and varieties of ingredients all laid before you. The toughest part is trying to decide what to eat.

When I was in Jakarta, thanks to the help of Renis, who invited Ying and I to come to her favorite Nasi Padang Indonesian food restaurant in Jakarta, we ate at Rumah Makan Surya Masakan Padang. What I liked about this restaurant, as opposed to others I ate in Jakarta, is that it seemed not so much like a chain, but it had more character to it. The restaurant is known for its makan Padang, Padang food, and as soon as we arrived, I could smell the aroma of the incredible dishes.

The beef rendang is a famous Indonesian food that’s commonly served at Nasi Padang restaurants, and it’s a dish you don’t want to miss. The combination of chilies and herbs, mixed with desiccated coconut, and caked onto each piece of meat, makes it incredible. Beef rendang is one of the greatest Indonesian dishes. Additionally, another common Indonesian Padang food that you’ll find is gulai otak, which is brain curry, usually made with cow brains. The cow brains are incredibly creamy and soft, and then it was within a very creamy coconut milk based curry. I’m also a huge fan of the different types of fresh chilies and sambals that you each along with your rice and curry when you eat Nasi Padang. Rumah Makan Surya Masakan Padang is an amazing restaurant in Jakarta, and I fully loved 


Resep Cara Membuat Rendang Sapi Khas Padang




  • 3 cm laos atau lengkuas
  • 3 cm kunyit yang dibakar dan dibersihkan kulitnya
  • 2 cm jahe yang dibakar dan dibersihkan kulitnya
  • 150 gram cabe merah besar (lombok) atau sesuai selera
  • 150 gram cabe merah keriting atau sesuai selera
  • 15 siung bawang merah
  • 6 siung bawang putih
  • 5 butir kemiri
  • 1/2 sendok makan ketumbar
  • 1 sendok teh jinten yang masak tanpa minyak (sangrai)
  • 1 sendok teh bubuk pala
  • 2 sendok teh garam
Proses pengolahan rendang Padang:
  • Masukan secara perlahan santan cair ke dalam wajan dan campurkan bersama daun kunyit, asam, serai dan semua bumbu yang telah dihaluskan. Kemudian ratakan secara perlahan-lahan dengan cara diaduk-aduk.
  • Masak santan tersebut dengan api sedang sambil terus diaduk agar santan tidak sampai menempel pada bagian pinggir wajan (tidak pecah). Aduk adonan tersebut hingga merata selama kurang lebih 30 menit kemudian masukkan potongan daging sapi yang telah dibersihkan secara perlahan dan merata.
  • Terus aduk daging sapi tersebut dengan api sedang hingga santan mengeluarkan minyak dan daging sapinya matang luar dan dalam.
  • Angkat lalu sajikan dengan menggunakan piring berukuran besar.

Tips sederhana yang bisa Anda lakukan saat memasak rendang:

  • Gunakanlah santan murni hasil dari kelapa yang diperas, bukan dari santan instan karena santan sangat berpengaruh terhadap hasil masakan sebab minyak hasil dari santan yang mengering akan mempengaruhi rasa gurih serta kenikmatan khas rendang.
  • Selalu menggunakan daging yang fresh. Dan jangan memotongnya searah dengan urat daging karena daging akan sulit empuk. Potonglah daging dengan bentuk persegi yang melintang atau bersebrangan dengan arah urat. Agar daging tak mudah hancur, maka Anda bisa memotongnya dengan ukuran yang agak besar.
  • Agar daging tidak rentan hancur, Anda bisa mengangkat daging setelah matang dan memisahkan dengan bumbunya. Setelah bumbunya terasa telah agak mengering, maka Anda bisa mencampurnya kembali.

Cara Memasak Gulai Otak Sapi Khas Masakan Padang

Bahan-Bahan Utama:
  • 1 potong otak sapi
  • 750 ml liter air santan dari satu butir kelapa
  • 3 lmbr daun mangkok iris halus
  • 3 lembar daun jeruk
  • 2 batang daun serai geprek 
  • 1 ruas jahe memarkan
  • 2 ruas lengkuas memarkan
  • 2 lembar daun kunyit potong-potong
  • 3 sdm minyak untuk menumis
Bumbu Yang Harus Di haluskan:
  • 10 siung bawang merah 
  • 5 siung bawang putih
  • 2 biji cabe merah
  • 1 ruas kunyit bakar
  • 5 butir kemiri sangrai
  • garam secukupnya
Cara Memasak Gulai Otak Sapi Khas Padang : 
  1. Pertama-tama adalah membersihkan otak sapi nya, anda bisa menggunakan dengan cara mengukusnya atau merebus nya, yang penting adalah melakukan salah satu tarsebut sampai otak sapi benar-benar matang lalu angkat dan sesudah dingin anda bisa membersihkan urat-urat darah yang masih menempel bila sudah potong-potong dan sisihkan
  2. Tumis bumbu halus daun jeruk, serai, jahe juga lengkuas sampai tercium bau wangi tumisan dan juga bumbu matang
  3. Tuangkan santan sedikit demi sedikit sambil sesekali di aduk perlahan sampai mendidih lalu anda masukan otak sapi nya dan masukan daun kunyit beserta daun mangkoknya, aduk-aduk perlahan sampai bumbu merasap dan santan menjadi lebih mengental lalu angkat
